Pre heat your oven to 350 F.</div>

In a bowl cream the butter and sugar then add the eggs one at time the add the vanilla.</div>

Spread the batter into a 9 inch spring form pan and bake for 20 minutes cool completely.</div>

In a bowl beat the cream cheese and sugar until smooth.</div>

With an electric mixer whip the cream and powdered sugar to stiff peaks the n fold it into the chocolate mixture and place in your refrigerator.<br />

Layer 3:</h3>

In a bowl whip the cram to stiff peaks.<br />

In another bowl beat the cream cheese and sugar until smooth then fold in the whipped cream.<br />
<br />
In a small bowl mix the cold water and gelatin let stiffen then add the boiling water stir until smooth then fold into the cream cheese mixture.<br />

Assembling:</h4>
<br />
Spread the chocolate cheese cake mixture over the chocolate cake crust then spread the mousse over the cheese cake and let freeze.<br />

<br />Layer 4:</h3>

In a microwave safe bowl boil the cream then pour it over the chocolate stir until completely combined.<br />
<br />
Take the cake out of your freezer and remove the edge of the pan then pour the ganache over the cake and gently spread it over the edges.<br />

Decorating:</h3>
<br />
Before the ganache sets, completely cover the edges with the mini chocolate chips.<br />
<br />
With the white chocolate put a big dot in the middle and make spirals out from it.<br />
<br />
Then take a tooth pick and gently run it though the white chocolate.<br />
<br />
In a microwave safe bowl boil the 1/2 cup of cream and pour it over the 1/2 cup of dark chocolate chips stir until combined.<br />
<br />
With an electric mixer whip the ganache until it turns light brown the pipe it around the edges of the cake.<br />

I decided to make this ice cream because we had some milk left from one of our goats that we just started milking. This recipe is almost like soft serve.<br />

Here's how to make it.<br />

Chocolate Ice Cream</h2>

2 cups of goat milk or whole milk<br />
1 cup heavy cream<br />
1/2 a cup of cocoa<br />
4 oz semi sweet chocolate<br />
4 egg yolks<br />
3/4 a cup of sugar<br />

Instructions:<br />
<br />
In a large saucepan mix together the milk and cream and let it simmer then add the chocolate and stir until it melts.<br />
<br />
In a heat proof bowl beat the egg yolks and sugar until they are pale yellow.<br />
<br />
Pour the hot mixture over the eggs and sugar stirring constantly so you don't scramble the eggs.<br />
<br />
Return to the saucepan and cook until thick(Don't let it boil).<br />
<br />
Place in an ice bath until is's completely cooled.<br />
<br />
Make according to your ice cream maker's instructions.<br />
<br />
Let the ice cream <span style="font-family: "times" , "times new roman" , serif;"><i>ƒ</i></span><i>reeze</i> overnight .<br />

Serve with your favorite toppings.<br />

A few days ago I did a timed baking challenge so I could practice in case I get on the Food Network show called the Kids Baking Championship. I had an hour and a half to make a dessert a with any thing we had in our kitchen. So I made these brownies.<br />

Here's how to make them.<br />

Mocha Brownies With Chocolate Marshmallow Sauce</h2>
For the brownies:<br />

1/2 a cup of melted butter.<br />
<br />
1 cup of sugar.<br />
<br />
1/2 a cup of instant hot chocolate mix.<br />

2 eggs<br />
<br />
1 tsp of vanilla.<br />
<br />
2 T of cocoa powder.<br />
<br />
1/4 of a tea spoon of baking powder.<br />
<br />
1/2 of a cup of flour.<br />
<br />
1/4 of a cup of water.<br />
<br />
2 T instant expresso powder.<br />
<br />
Instructions:<br />
<br />
In a large bowl mix together the butter, eggs sugar, vanilla, water and expresso powder.<br />
<br />
Add the flour baking, powder, hot chocolate mix, salt and cocoa.<br />
<br />
Bake at 350 F for 25 to 30 minutes.<br />
<br />
<br />
For the sauce:<br />
<br />
1 cup of sugar.<br />
<br />
1/2 of a cup of hot chocolate mix.<br />
<br />
1/2 a tsp cream of tartar.<br />
<br />
1 1/2 T of honey.<br />
<br />
2 egg whites.<br />
<br />
Instructions:<br />
<br />
In a medium sauce pan mix together the sugar, hot chocolate mix, cream of tartar, water, salt, and honey, cook over medium heat until the sugar has dissolved.<br />
<br />
Place the egg whites in your mixer with a whisk attachment and whip the egg whites on high until they turn white continue whipping on high while you pour the hot sugar syrup into the egg whites.<br />
<br />
Continue whipping for 7 minutes.<br />
<br />
<br />
Put the sauce into your refrigerator until it cools.<br />
<br />
Serving:<br />
<br />
Slice the brownies to the size you want.<br />
<br />
Place two of them on a plate and pour the sauce over them.<br />
<br />
Serve with marshmallows and chocolate sauce.<br />

Today I'm am going to tell you 8 tips to make a good souffle. The first time I made a souffle it didn't rise and it also caved in. here are the tips to make a good souffle.<br />

1: Add an acid.<br />
Adding an acid like cream of tarter should give you egg whites more stability.<br />
<br />
2: Use room temperature eggs.<br />
Using room temperature eggs will make the whites easier to whip whereas cold eggs will be harder to whip.<br />

3: Don't drop your bowl of egg whites on the floor.<br />
When I made my souffle my mom dropped my bowl of egg whites on the floor and a lot of air got knocked out of them.<br />
<br />
4: Don't use greasy equipment.<br />
If any of your equipment has any grease on it wash it or your souffle wont rise very well.<br />
<br />
5: Don't overfold.<br />
Only fold until it is just incorporated. If you fold it longer you will eliminate most of the air.<br />
<br />
6: Use a ceramic souffle dish.<br />
When you are making a souffle it is important to use a souffle dish. If you use glass or metal it will probably stick.<br />
<br />
7: Use the bottom oven rack.<br />
If you cook your souffle on the bottom oven rack it will most likely rise better.<br />
<br />
8: Don't open the oven door.<br />
If you open the oven door when your souffle is cooking it will fall even if you only open it a little.<br />

A few weeks ago I made a chocolate pinata for my sister's birthday.<br />

First melt your milk or dark chocolate in a bowl in your microwave or over a double boiler and spread it on the inside of the bottom over your mold.<br />

Then melt your white chocolate and color it. Then spread it on the top part of the mold.<br />

Refrigerate both parts. When they are hardened remove the from your refrigerator and add a second coat of chocolate and refrigerate it again. Make sure you have some colored chocolate left.<br />

Peel down the sides of the mold and remove the chocolate shell and fill the bottom overflowing with candy.<br />

Put some leftover non colored chocolate in a sandwich bag and cut a small place off one of the corners. Pipe some chocolate all the way around the rim of the bottom part. Next place the top on and fill any gaps with more chocolate. If you want, put some small candies like M&Ms on the top using some colored chocolate.<br />

Today I was watching a cooking show called Chopped and my mom said I could make lunch using any thing that we had in the kitchen. I decided to make one pot sausage pasta.<br />
<br />
Here's how to make it.<br />

One Pot Sausage Pasta</h2>

Ingredients:</div>

One pound of mild italian sausage</div>
<div>
1/2 of an onion- diced</div>
<div>
4 cloves of garlic-diced</div>

12 oz of pasta<br />
3 to 4 cups of chicken broth<br />

Instructions:<br />

Put the sausage, onion, and garlic in a large pot over medium heat until the sausage is cooked.<br />
<br />
Pour 3 cups of the broth into the sausage mixture.<br />
<br />
Turn to high heat and let it boil.<br />
<br />
Add the pasta and let it cook for approximately 15 minutes or until the pasta is soft and the broth is absorbed ( you may need to add more broth).<br />
<br />
Let cool slightly and serve.<br />

Today I made homemade Payday bars out of homemade caramel and party peanuts. I got the idea when we made caramel apples with peanuts on them on Halloween. They are delicious with no corn syrup at all.<br />

2 cups of heavy cream.</div>

1 cup of honey.</div>
<div>
1 stick of butter.</div>

1/2 a cup of peanut butter.</div>

2 pounds of party peanuts.</div>

Mix the sugar cream and honey in a medium saucepan.</div>
